Great chili is enjoyable any time of the year, but there’s nothing better than cozying up on a chilly winter evening with a good, home-cooked meal. Make your next batch of Chili with a combination of Akaushi Beef Chuck and Akaushi Ground Beef and prepare to be amazed! Your taste buds (and your family) will love you for it!
Chili Ingredients
- 1 lb. boneless Akaushi beef chuck, cut into ¼ cubes
- 1 lb. Akaushi ground beef
- 1 cup onions, chopped
- 1 cup green peppers, chopped
- 3 tablespoons garlic, minced
- 2 jalapeno peppers, chopped (remove seeds)
- 5 tablespoons chili powder (or to taste)
- 2 teaspoons ground cumin (or to taste)
- 2 bay leaves
- Salt and pepper to taste
- Up to 3 cups beef broth
- 3 17 ounce cans of plum tomatoes, drained and chopped
- 1 6 ounce can of tomato paste
- 5 tablespoons peanut oil
Chili Directions
In a stainless steel or enamel stockpot, saute the meat in 2 tablespoons of peanut oil until brown. Then, transfer with a slotted spoon to a bowl. Add 3 tablespoons peanut oil to the pot, along with the onions and green peppers. Cook until softened. Then, add the garlic. Cook at stir for 3 minutes.
Add the meats, jalapenos, chili powder, ground cumin, bay leaves, salt and pepper. Simmer for 2 minutes.
Add 1 cup broth, tomatoes and tomato paste. Simmer for 2 hours, stirring frequently. Add more broth if it thickens too much. ENJOY!
Cornbread Ingredients
- 3 cups cornbread mix (3 packages of Martha White plain)
- 2-1/2 cups of milk
- 1/2 cup salad oil
- 3 tablespoons sugar
- 1 can cream style corn
- 1/2 cup chopped jalapeno
- 1-1/2 cup grated yellow cheese
- 3 eggs beaten
- 1 large white onion minced or grated
- 2 tbs minced garlic
Cornbread Directions
Mix all the ingredients together and bake at 400 degrees until brown. Check about 40 minutes.
