- Thaw in the refrigerator for 24-36 hours for steak cuts and 48 hours for whole cuts
(do not thaw at room temperature, microwave or warm sink with water)
- Keep in vacuum-sealed packaging while in the refrigerator
- Remove from refrigerator (and packaging) and bring to room temperature 30 minutes to 1 hour before cooking
- Do not re-freeze the meat once it has been defrosted
